WINEMAKER
Fourth generation wine-maker, Denis Garod,35 years old, cultivates an vineyards of 22,25acres(9 hectares) in the Beaujolais
The wines produced are fabricated respecting ancestral methods and the environment in order to present quality products. In order to produce a superior grape, the soil around the vines is loosened or covered in grass to control the yield. Treatments are calculated according to disease and weather.
The harvest is hand-picked and thus very costly but this permits a rigourous sorting of the grapes for an optimum crop and allows the preservation of the entire bunch for the traditional Beaujolais wine-making process. The wine-making remains traditional, reflecting the character of each terrain. Allowing the entire bunches of grapes to rest for 8-12 days in the vat with controlled temperature is necessary to produce red wines.
The solids, skins and grapes, that float to the surface are submerged in order to give more character to the wine. The white wines undergo direct pressing and then fermentation at 64-68°F,permitting them to retain fresh and fruity flavors. The aging is principally carried out in vats with certain vintages being transferred to oak barrels.
